Grilled Summer Salad

Feeds 4 Hungry People

Ingredients

  • Flank Steak, 1 Pound
  • Romaine, 1 head, quartered
  • Avocado, 3 each, pitted, sliced
  • Cherry Tomatoes, Halved, 2 handfulls
  • Green Onions, One Bunch
  • Corn on the Cob, 2 each
  • Pesto Sauce, 3 tablespoons
  • Adobo Sauce from Canned Chipotles, 2 tablespoons
  • Plain Yogurt, 1 cup
  • Lime Juice of 3 limes
  • Salt and Pepper

Directions

1. Preheat the grill to high, Run the Pesto on the flank steak and season with salt and pepper

2. Season Corn with Salt and pepper, add to grill

3. Combine the Adobo sauce, yogurt and lime juice for the dressing

4. Plate the salad starting with the romaine, then the avocado, cherry tomatoes

5. Keep turning the corn on the grill and brown on all sides, then grill the green onions the same way

6. When corn and green onions are well charred, take a knife and cut the corn kernals off the cob

7. Cut the grilled green onions into sticks, add both the corn and onions to plated salad

8. Turn grill to high, and once very hot, add the flank steak

9. Grill the steak for 3 minutes on each side, medium rare is what you want

10. Let steak rest for 5 minutes before slicing thin and adding to salad

11. Drizzle the dressing over the top for an amazing grilled summer salad
