Grilled Focaccia Appetizer

Throw a fantastic last minute grilled app into your Weekend


1 large loaf of focaccia bread, butterflied

2 bunches fresh arugula

1/2 cup Figs, Chopped

1 large shallot, sliced thin

5 whole roasted garlic cloves, chopped

1/4 pound or more of goat cheese

fresh cracked pepper

1. Leave the goat cheese out to soften, then spread like butter over the butterflied focaccia. Reserve some of the cheese to sprinkle on top.

2. Lay the arugula first, followed by the figs, remaining ingredients and remaining cheese

3. Grill on a low heat while closing the lid between turning. Grill until cheese is melted and bread is toasted

4. Cut into pieces and serve. Balsamic Vinegar & Mushrooms also compliment this earthy appetizer
